Malligai Poo Idly (Jasmine Soft Idlys)
The hallmark of Kundu Malli rice is its ability to produce idlys as white and soft as a jasmine flower.

| Whole White Urad Dal | 1 cup |
| Poha / Aval (Thick variety) | 1/2 cup |
| Fenugreek Seeds | 1 teaspoon |

Easy Malligai Poo Idly Recipe Instructions
Soaking
Wash and soak the rice with fenugreek seeds in one bowl. Soak the urad dal separately. Let them soak for at least 5 hours. Soak the poha separately 30 minutes before grinding.
Grinding
Grind the urad dal until it becomes very airy and butter-soft. Remove it, then grind the rice and poha together to a smooth (or very slightly grainy) paste.
Fermenting
Combine both batters with salt. Mix thoroughly using your hand. Let it ferment for 8–12 hours in a warm spot.
Steaming
Gently mix the risen batter and pour into greased idly molds. Steam for 10 minutes for the softest results.
