Healthy Mixed Vegetable Pulao
A nutritious one-pot meal where Jeera rice is cooked with colorful vegetables and aromatic spices.

| Mixed Veggies (Carrot, Peas, Beans) | 1 cup |
| Shahi Jeera (Caraway Seeds) | 1 teaspoon |
| Thick Yogurt (optional) | 2 tablespoons |
| Ghee | 1 tablespoon |
| Cashew Nuts | 10-12 nos |

Golden Base
Heat ghee in a pan. Roast cashews until golden and set aside. In the same ghee, add shahi jeera and whole spices.
Veggie Sauté
Add onions and sauté until translucent. Add the mixed vegetables and sauté for 2 minutes. If using, stir in the yogurt now for a creamy texture.
Rice & Water
Add the washed rice and sauté for a minute to toast the grains. Add 1 ½ to 2 cups of water and salt.
Final Touch
Cover and cook on low heat until the water is absorbed and rice is fluffy. Garnish with roasted cashews and serve.
